After taking a pilates class and a vinyasa yoga class back to back I was hungry!! It was really nice though, to take the time to concentrate on my core and stretching.
I was going to make lettuce wraps for dinner, but they sounded so good I make them for an early lunch. I improvised with the sauce, because I didnt have a choice. They were very good, and so much better for your than any version you would get out.
Ingredients:
- 2 tsp. of canola oil
- lean ground turkey(1/2 pound)
- organic extra firm tofu(1/2 container)
- scallions( both white and green parts)
- 1/2 red bell pepper
- diced ginger
- 2 garlic cloves
- peanuts
- rooster sauce
- wheat free asian sauce
- boston bibb lettuce
