My mother asked me to take on a couple of cooking projects for the upcoming
holiday festivites including: some appetizers, side dishes, a dessert, and a turkey. One of
my favorite holiday appetizers is goat cheese encrusted in sunflower or pumpkin seeds and
dried cranberries. It's so easy and really pretty on a plate.
Goat cheese Encrusted
1x "log" of goat cheese(plain)
1/4 cup of dried cranberries(trader joe's are the best)
1/4 cup of roasted sunflower or pumpkin seeds
1x apple(cut into slices)
small rice crackers(mary's are declicious)
or
tlc crackers(for a gluten variety)
Roll the log of goat cheese in the dried crans and seeds. You
might need to push the seeds and crans in to get them to hold.
I think it looks pretty if some are around the plate too. Place the apple
and crackers around the sides. Serve.
