After a day of reading, writing and studying I got ready for dinner our friend's Nyssa & Ben's house.
We, Nyssa and I, decided to make lasagna's for dinner. I wanted to try and create a polenta layered one. I used Yankee Buffalo from Warner NH for the 'red sauce' layer. For the ricotta layer, I roasted a butternut squash(medium size) and mixed it into part-skim ricotta with one egg and parsley. Then, for the polenta I cooked 'quick polenta' and let it cool into 'lasagna' sheets. Though, the sheets did not come out as good as I had hoped.

Our friends, Ali and Jay made a 'wedge' salad with feta, tomatoes and iceberg with ranch dressing. I don't think I've had ranch since ... forever! It was a great start to our meal.

My plate of polenta lasagna!
I wanted to make sweet potato and carrot cake for dessert tonight, but didn't get to it! I know sweet potato seems weird in a cake, but it's quite DELICIOUS!! I made this one for my ladies at school on Thursday!
Sweet Potato and Apple Cake( adapted from Whole Foods)
Ingredients:
3/4 cup of chickpea flour
1/3 cup of brown rice flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 cup brown sugar
2 egg
1 cup of chunky applesauce
2 cups of peeled and grated sweet potatoes
1 tbsp. of extra virgin olive oil
Methods
Preheat oven to 350°F. Lightly oil an (8-inch) baking pan. In a large bowl, whisk together flours, baking soda, salt, cinnamon and nutmeg, and set aside. In a second bowl, whisk together sugar, eggs, and oil until well combined. Stir in the applesauce, and sweet potato. Then add apple mixture to flour mixture and stir to combine. Transfer batter to pan and bake until deep golden brown, about 40- 50 minutes. Set aside to let cool and then cut into squares and serve.
