Healthy Fried Rice




After over 15 hours in the car yesterday, I really wanted something warm and inviting for lunch. The fridge and cupboards were bare, so I made a quick trip to Market Basket to pick up some things.

On the menu: Healthy Fried Rice.

1/2 lbs. of turkey cutlets
2 scallions
2 cloves of garlic
1 red pepper
1/2 large zucchini
1 tomato
2 eggs
3 cups of cooked brown rice
2 tbsp of extra virgin olive oil
1 tsp. of rooster sauce
1 tbsp. of gluten free soy sauce


Cook rice by package instructions. Dice scallions(separating the white and the green pieces), garlic, red peppers, zucchini, tomato, and the turkey cutlets. Turn the pan on medium-high heat and place 1 tbsp. olive oil, garlic, and white parts of the scallions into the pan for 45-60 seconds. Add the turkey pieces and cook through. Add the red pepper and zucchini into the pan and cook for 2 minutes. Add the second tbsp. of olive oil and the rice to the pan, cook for 2-3 minutes to get that crispy fried rice feel. Next, place the two eggs in a bowl and quickly stir together. Make a hole in the middle of the rice mixture in the pan so you can see the bottom of the pan, and place scramble the eggs. After the eggs are cooked through, incorporate them into the rice mixture. Add the green parts of the scallions, soy and rooster sauce. Enjoy!
