After a long day of working at the Boston Convention Center for the American Dietetic Association getting ready for our national conference,FNCE, I came home and made a wonderful dinner- black beans & sausage! It was quite easy and was MUCH more delicious than I thought. Another winner from Everyday Food!!
I used the dutch oven again!
Ingredients:
2x cans of black beans(rinsed and drained)
1 package of turkey kielbasa
2x shallots, diced
2x cloves of garlic
1/4 cup of hard cider(I used Harpoon)
2 cups of low sodium chicken stock
3x carrots, diced
1 red pepper, diced
3/4 cup of parsley, minced
1 tbsp of extra virgin olive oil
plain greek yogurt(dollop for on top)
Heat olive oil in the pan and add the kielbasa. Cook for 5-7 minutes on medium heat until the meat is browned. Take out the kielbasa. Add the hard cider, shallots, garlic, carrots, and red peppers. Cook for 3 minutes on medium heat. Then add the chicken stock,and black beans,bring to a boil. Then, add the kielbasa back in and simmer for 10-12 minutes. Turn off the heat and add the parsley. Enjoy with a dollop of greek yogurt on top.
I made quinoa with cumin and pistachios to go with this!
