Brrr....
I walked to work this morning, and actually had a 'double' fleece on today. Yikes!
I made some green lentils/sweet potato stew after reading Kath Eatsversion on her blog.
Green lentils have 5 grams of fiber per serving as well as 10 grams of protein. A good healthy ingredient to have in your kitchen and to use regularly.
My stew is a warm and deliciously healthy meal! I had it for breakfast this morning with a dollop of greek yogurt on top!
Green Lentil & Sweet Potato Stew
- 1 carton of low sodium chicken stock or vegetable broth
- 3 carrots peeled and cut into small cubes
- 1 medium onion diced
- 1/2 cup of water
- 3x small sweet potatoes diced
- 1 1/2 cups of green lentils
- 1 tbsp. of cumin
- 2 cloves of garlic diced
- 1 tbsp. curry powder
- salt and pepper to taste
Could add:
- 2x stalks of celery-diced
- 1x red pepper diced
Place all ingredients into a crockpot and cook on low heat for six hours. Top with a dollop of greek yogurt. Delicious!!
