Is there anything better than a great cookie?
Yep...a fantastic tasting GLUTEN FREE cookie!!!
Meg's Favorite Cookie recipe
Ingredients
1 1/4 cup of Bob's oat flour
1 1/4 cup of Bob's brown rice flour
3/4 cup of organic brown sugar
3/4 cup of organic sugar
2 medium eggs
1/2 tbsp. of vanilla
1/2 tbsp. of baking powder
1/2 tbsp. of baking soda
1/2 tsp. of salt
3/4 cup of unsalted butter, softened
1/2 tbsp. of cinnamon
1 cup of Bob's gf oats
1 cup of flake coconut
1 cup of chopped pecans
2 cups of dark or semisweet chocolate chips
parchment paper(for your cookie sheet)
Preheat the oven to 350 degrees. Using a hand or bowl mixer whip the sugar and butter together. Mix flour, baking powder, baking soda, cinnamon and salt in a bowl and set aside. Add one egg at a time to the butter and sugar. Then add the vanilla. Slowly add the dry bowl ingredients into the wet ingredients until incorporated. Then, add the coconut, pecans, oats and chocolate chips(in this order). Line a cookie sheet with parchment and dollop 1 tbsp. size balls of dough about 2 inches apart. Bake for 10-14 minutes(it depends on your oven) Recipe makes 3 dozen cookies.

I'm always on the hunt for gluten free cooking and baking. So happy to be introduced to your site!! I think it deserves some baking of these cookies as a celebration :)
I clicked over here just to see these amazing looking gluten free cookies :) I'm excited to try making them!
I think some credit is due over here for the original recipe - even if it did have gluten!
