First Christmas cookie

Today, we went sledding. I forgot how much fun it is, and what great exercise
walking back up the hill is everytime. Lola was a hoot, running after us trying to jump on the sleds.
We couldn't get the dvd player working, so no Jillian today! Dave and I did do level 3 yesterday, it was hard.

Now, on to the cooking of the day. I found last December's Eating Well at the house, with a date
cookie with sugar, coconut, rice krispies, and butter. They turned out pretty good, I think my next batch will use half
the sugar.
In the cookie:
4 tablespoons butter
1 cup of sugar(next time ill use half)
1 1/2 cups of chopped dates

heat these three ingredients in a pan, on low heat til they
become a paste consistency.

Add:
2 cups of rise krispies( ugh real rice krispies have gluten and high fructose corm syrup-ugh)
1 cup of shredded coconut
1 teaspoon of vanilla
wax paper
cookie sheet( to put balls in fridge to cool)


when they are slightly cooled, roll into little balls. Put onto wax paper on cookie sheet. Cool in the fridge.

Next time, I'm going to try agave nectar instead of sugar and brown rice cereal.

In Ligonier, a small town,a couple miles from our house, there is a new gluten free bakery. Of all places for a gluten free bakery, Ligonier
was a shock! The place is quaint and very sweetly decorated. Great cookies, and tomorrow I'll pick up some dinner rolls to try.
