So, I took advantage and made a full veggie filled dinner.
On the menu tonight:
- sweet potato gnocchi(gluten free)
- roasted yellow and red beets
- beet greens sauteed in garlic and olive oil
- goat cheese
I roasted the beets and blanched the greens. Then, made homemade sweet potato gnocchi.
