Feel Better Soup

I woke up this morning feeling dreadful, like I was having a gluten attack(but I had had no gluten) and had a sore throat. So, I canceled my clients for the morning, and raced straight to the grocery store to whip up some "Feel Better" soup. It worked pretty well, and I got my notes written out for my exam tomorrow afternoon. Now, I just need to do some major memorizing.

Luna was a perfect angel today. We took a nice slow walk in the sun, and went to the park which I think was beneficial for both of us :)

In my "Feel Better Soup"

The soup starter(2x scallions diced, 1 tsp. grated ginger and 2x cloves of garlic minced)


3 cups of low sodium chicken broth


2 carrots(diced), 1/2 zucchini(diced), 2 cups of baby spinach, 1 cup of parsley(minced), 1 can of drained chickpeas, and 1 can of tomato paste...


Place all of the above in a soup pot, and cook on low heat for 30 minutes.

I also made some chili for this evening, and picked up a poblano pepper to add for some extra heat. But, when dicing and de-seeding the little 'sucker' I wiped my runny nose. AWW- about 30 seconds later my nose was on FIRE! I researched online quickly, to embarrassed to call anyone, and came up with alcohol sanitizer, and cold milk. So I sprayed the sanitizer on my hand and placed it on my nose first, and then placed my nose into this cup of milk. I know it's weird, but it worked!!

4 Years Today!



Today was our 4 year anniversary, as well as three VERY important peoples' birthdays-our friend's Kristen and Peter(our favorite Canadian couple) and my cousin Biz! So happy happy to us all :) Dave got me this bouquet to celebrate...I say my new ring says it all! :)

I spent the morning training clients, and was so happy to be out of the pouring rain.I also got in a nice ride on the bike(indoors) and felt good about the starting the week off with some cardio. I then skipped home to the let the little Luna Bay out, and to spend the rest of the day studying for my exams and finishing a case.


Most of the day Luna slept next to me while I did work...




I unfortunately forgot beans to make chili(something I never do), and didn't feel like going shopping in this weather so we got Thai Hut for dinner! I usually get a curry because they are gluten free and their massaman curry is delicious! I get it with chicken, and it comes with onions, carrots and peanuts, but I like add extra veggies to make it more nutritious and last three to four meals :)


Tonight I added Seapoint Farms veggie blend to about 1/3 of the curry with 1 cup of fresh baby spinach and 1/2 cup of brown rice and sauteed it altogether...

Friends in the Rain




It's been just POURING rain ALL day long, but we had many visitors to get us through! Our wonderful friends- Nyssa and Ben, and Beccah and Brian all came over to see Luna and brought engagement treats, too. Thank you Brian and Beccah for the Tulips(note the above), and Nyssa and Ben for the goody bag. :)

After a rainy afternoon of visitors, I got into my nutrition epidemiology studying while Dave spent some quality time with little Luna(aka took a nap with her). Dinner tonight was quick and easy due to a study session at my friend Elise's house. So, we had tomato soup and grilled cheese with arugula salad.

I went to my friend Elise's for a nutrition epi study session. She made these breathtaking chocolaty gluten free cookies with toasted walnuts. Lauren brought these little delectable kumquats!

Family Celebration

After a nice long drive back to Boston, lasting a total of 10 hours, Dave and I headed to my cousin's house in Arlington for a family celebration. My cousin Tyler had gone to Haiti and had amazing photos to show us, my cousin Biz's birthday is on Monday, and we had to celebrate our engagement! It was nice to be with family, and to catch up!

We had Stone Hearth pizza for dinner, with a beautiful salad of mixed greens. I forgot to take a picture of dinner, but it was delicious. This is my second time having their pizza, and I have enjoyed it both times. The crust is very thin and crispy, which can be hard when cooking gluten free crust!

The best part of this company's is their menu which explains exactly what can be made GF(gluten free) or not. So add this to your list- gluten free buddies!

Church Brewery



Yesterday Dave, my mum, Gran, and I went to the Church Brewery for lunch. It was amazing, with the brewing system in the pulpit and the rest of the church(a Pittsburgh landmark) converted into tables and booths.

After lunch we took a walk through the wonderful Chatham College(actually now a university) near my grandmother's house.

Chatham was holding Pittsburgh's first Local Food Showcase... so of course I had to stop in...

Bella Donna's Bakery




Another great couple of days on the mountain... with a trip to Bella Donna's gluten free bakery/cafe to get some baked goods to take home to Boston. As a 'gluten freer' it is nice to have a place like this to grab a treat once in awhile, especially on vacation. I also promised another gluten free buddy that I would bring her some treats :)



Bella Donna's has been a great addition to the town of Ligonier in the past year...

Multi- Generational Dinner

Another great day on the mountain: with Mum and Gran up for dinner, a nice 'couple' jog outside, and some great hikes with the pup.

She is just plain pooped by the end of the day- with feet up in the air and a loud snore coming out of her mouth...priceless....


I made shepherd's pie last night for everyone...

I started with roasting sweet potatoes....


Then cooked lean meat(96%), celery, onions, carrots and peas down and added chicken stock. I mashed the roasted sweet potatoes and added a little(1/2 cup) of shredded cheddar cheese into the sweet potatoes and covered the meat mixture. Then baked it on 450 for 10 minutes.

Our family friend, Wicker also came over for dinner, and brought the most amazing engagement gift( the tree which we got engaged under) that her daughter had painted...


We're off to Bella Donna's Bakery for some gluten free goodies. I promised a gluten free friend in Boston, I would bring her back from yummy treats :)

Monday fun...

Another great day in PA... with the snow, and the little Luna ...

We went sledding, took some great walks through the woods, and I actually got some studying in for my exams next week :)

Big Weekend



Happy Monday!
I haven't posted in two days-- but it's for TWO good reasons.

Friday afternoon we met with Anne of Radiance Labradors, who we had spoken to about possibly getting a puppy. She and her dogs were just breathtaking, and we did not leave empty handed :)
We are happy to admit(note the pictures above and below) we have a new addition to our family- Ms. Luna Bay! Dave and I are very excited and in utter amazement with how good she is(aka no accidents in the house, and just sleeps for hours on end after a walk). She's a joy, and we are blessed to have her in our life. She has been in absolute love with the snow here, we have about a foot. I wanted to make sure you all could see how cute she is...

Also- our other exciting news is...Dave asked me to marry him on Saturday. It happened while we were on a walk with Luna to the "pine tree"(a family treasure/emblem) and as I turned around after touching the tree, Dave was standing there with ring and a HUGE smile on his face...with tears in my eyes I said yes and haven't stopped smiling since!!!!

We are both very excited and had a nice weekend with my mum, Tink(my family basset/beagle mix) and Luna. I promise to post pictures of the tree, our engagement meal, etc - when I get them off my digital camera.

For now... my mother left this scene for us for the week at the house...


Last night for dinner we had chili...it was warm and inviting and a great way to finish the weekend...

Last night we had 'moon' salad again(argula, avocado, sunflower seeds, and carrots)...got to finish what's in the house...



Bell and Evans chicken with kamut(lowfat mac and cheese)...didn't finish it though...wasn't hungry...

National Nutrition Month




March is National Nutrition Month! Yippee!!

The ADA(American Dietetic Association)annually sponsors this month as a nutrition education and information campaign. So, to do my part, I have added a link to their website on my blog, which you can click on to learn helpful tips and ideas.

The ADA recommends some great nutrition tips:


1.Focus on fruits and veggies: “Take a good look at your current diet and you’ll probably realize you’re not eating enough fruits or vegetables,” says Smithson(ADA spokesperson and RD). “Add a serving each day to one meal and increase it every few weeks. Adding more of these foods into your diet is important whether you buy frozen, fresh or organic.”
2.Look locally: From farmer’s markets to community-supported agriculture, you have many options to find new, fresh foods in your area. “This can be a great way to eat well and support your community at the same time,” Smithson says.
3.Make calories count: “Too often, people think of foods as good or bad and that only those on the ‘good foods’ list are okay to eat,” says Smithson. “When you’re choosing between options, focus instead on the one with more of the vitamins and nutrients that you need. Sometimes, foods with fewer calories aren’t always the healthiest options.” To figure out how many calories you need to achieve a healthy weight, visit www.mypyramid.gov.
4.Test your taste buds: A healthy eating plan emphasizes fruits, vegetables, whole grains, low-fat or fat-free dairy and includes lean meats, poultry, fish, beans and nuts. “Those are the basics, but within this wide range there are always opportunities to try new things and find new favorites,” Smithson says. “Expand your horizons. Try a fish you’ve never eaten before or find a new vegetable recipe. By testing yourself, you might find new healthy favorites to add to your regular grocery list.”
5.Trick yourself with treats: “A healthful diet doesn’t mean deprivation,” says Smithson. “If you have a sweet tooth, have fruit and yogurt for dessert. If you want a snack in the afternoon, have some trail mix or nuts. There is no reason to go hungry just because you’re making healthful changes.”

Kettle Cuisine(Gluten Free Soup)

Late in the afternoon,I was STILL hungry and decided, after having a cup of tea and some water, that I really was hungry. I had picked up a Kettle Cuisine soup awhile back, and decided this would be nice warm snack.

The box reads "gluten free, 140 calories, 15 grams of protein"- sounds good right?


It was about 1 1/4 cups of soup, which was a perfect snack. Don't the noodles look good...



Overall, I liked this soup. It had good chicken flavor, the noodles were not too chewy, and there were REAL pieces of carrots and celery- which I really liked!

O' the joys of having a car...

I made an early appt. at the VW dealership for my wonderful car for a quick easy recall this morning. Of course, it took longer than expected due to an unexpected hose leak(thankfully covered by my warranty).

I had made plans to see my friend Jamie and baby Joey for a late breakfast alas I was at the dealership too late, so we decided to go for lunch.

We decided onPanera Bread. The last time I went there, I asked the cashiers and a manager what soups I could order on a when I came, the onion soup being one of them. So I ordered their 'You-Pick-Two' greek salad(which I know is gluten free) with chicken and the onion soup(without croutons). Yet, for some reason I felt skeptical today, so after we got back to Jamie's house I went on their website, and WHEAT FLOUR is on their ingredient list for onion soup. ARGH!!!
So this doesn't happen to anyone else here is a gluten free list for Panera Bread: PB list.




Unfortunately, after picking up my car, around 5, I did not have enough time to make chili so I made pork stirfry for dinner.
