Exercise & a New recipe

I just used google pedometer and found out I walked over 4.5 miles today- just from walking to work, through Harvard Square and taking Luna on a walk. Woo hoo!

It's a good thing I stopped at Boloco for a breakfast bowl. I got their huevos rancheros: scrambled eggs, black beans, cheddar cheese, and fresh salsa. It was delicious, and kept be going ALL day long! No gluten in this dish!




I had borrowed my friend Wendy's Biggest Loser Bootcamp dvd to try so in between doing homework I tried it out! It was a lot harder than I thought...


Then, I decided to spin for 30 minutes. I was an exercising machine today, I think it's because I got stir crazy from doing homework ;)

Then, my college friend, Abbey, came over for dinner.

I tried a new recipe out on her: butternut squash and chicken sausage bake.



Dave thought it needed a little 'carb' on the side. So I tried a new gf pasta I had found at Market Basket- Hodgson Mills brown rice pasta. It was pretty good, but had sat for a little while, and got sticky. I think it would be better served immediately.





My plate- what a delicious meal! I'll try it again soon, so I can share the recipe! :)



Then, I made a new dessert bar to finish off our meal- Peanut Butter Oat Bars

1/2 cup of butter, softened
2 eggs
1/2 cup of sugar
1/2 cup of light brown sugar
1 cup of crunchy peanut butter(natural)
3/4 cup of gf oat flour
3/4 cup of brown rice flour
1 tsp. of baking soda
1 1/4 cups of chocolate chips
2 cups of GF oats

Preheat the oven to 350F. Use a mixer to cream the butter and sugars together. Then, add the peanut butter and mix. Then incorporate the eggs into the mixture. Flours are next with the baking soda. Then mix in the chocolate chips and oats. Make sure to grease the baking dish(I used a 9x9) before placing the very sticky and stiff dough into the dish. The bars will need to be smoothed even around the pan. Bake for 25-30 minutes and enjoy!
