When it's 15F with wind chill, it's time to get the crockpot back on.
In today's pot:
- 3 carrots, diced
- 2 stalks of celery, diced
- 2 shallots, diced
- 1 green pepper, diced
- 1 sweet potato, diced
- 3 chicken thighs
- 1 tbsp. of fresh ginger, diced
- 1 tbsp. of garlic
- 1/2 cup of frozen spinach
- 4 cups of homeade chicken stock
- 1 tbsp of panang curry paste
- 2 cans of light coconut milk
- 2 tbsp. of brown sugar
I tossed all the above into the crockpot and cooked it all day long on low. Then added rice noodles, left it on low and let the noodles soften for 10 minutes.
The finished product... thai curry soup...
I plan on having this for my breakfast tomorrow... YUM!!
Dave of course, does NOT believe that a person should just have soup for dinner so I made him a strata to munch on as well. Tonight's strata:
- 4 corn muffins
- 1 cup of milk
- 3x medium eggs
- 3x egg whites
- 1/2 cup of sharp cheddar cheese
- 2x chicken apple sausages
Preheat the oven to 350F. Mix all the ingridients together, and bake for 30 minutes or cooked through the middle.

I had to try it... it turned out pretty delicious. Next time I putting spinach in it though.
