Biz & Nate's Wedding Weekend




We had a great wedding weekend in the Berkshires. We stayed at Gedney Farm. It was breathtaking, and a ton of fun.


Biz & Nate had a wonderful 'welcome' bag in our room including a bag of Glutino pretzels.




The rehearsal dinner on Friday night was wonderful- filled with family and friend's stories.

I love the chalk board they used for table assignments...


The next morning I met Sarah for a run from Gedney to Mepal Manor and back around. We think it was about 2 and half miles. She officially kicked my butt! I need to run more often.

Afterwards, I re-fueled with a post run breakfast of fruit and yogurt.

The wedding was beautiful, my cousin was breathtaking and the tears were flowing in our pews.

They had their reception at Gedney Farms. The arrangements on the table had kale, grapes, olives, and more. They were a foodies dream!



One of the many appetizers this evening was butternut squash in champagne flutes. It was hot and just tasted like fall!

Luna is having a sleepover this evening, and tried to sleep in her buddy Lenny's puppy bed. She didn't fit...



Now they're finally asleep next to me...shhhh...

Busy Busy

After going to Interval Challenge I came home and made poached eggs on gf toast with baby spinach/parsley.



Then, I headed to the hospital to volunteer! The new Dietary Guidelines are out! Take a look!

For lunch I made a little side salad with beets, carrots, sunflower seeds, and greens with...

Then I headed to Dorchester, where I am teaching a cooking class to kids. We made snack mix(whole grain oats, dried cranberries, peanuts and pretzels), apple frogs, and carrots spiders!

The kids did a great job!


Yeah!!


Then, I flew to school for my class! Phew, I just made it!

I came home and made a salad with a Bell & Evans gf patty, apples, carrots and feta on baby spinach! It was perfect!



Tomorrow, we're off to the Berkshires for my cousin Biz's wedding! :)

The reality this week...

Happy Wednesday!


Yesterday, Dave asked me to make him some muffins, so I whipped up some gf apple and yogurt ones...



The yogurt really helped with that 'dryness' that happens in a lot of gf baked goods!


Then for dinner I made chicken and white bean chili. It was so good I had it for breakfast and lunch today.




I think I walked Luna too far yesterday, she's been asleep on her new moose all day!




Finally, this afternoon, I got Luna to take a walk. Phew!


I then tried to make chocolate chip oatmeal cookies with chickpea flour. They flattened! Argh!

Black bean pasta & Black chickpeas

I picked up this gf black bean pasta in Portsmouth this weekend.



Look at the amount of protein in this pasta!!! But, why o' why is there NO fiber- they took out one of the best part of black beans!! The ingredients: organic black beans, and water.


I made a little stir fry with red peppers, baby spinach, a small sweet potato, and some sunflower seeds. It was pretty good!


My friend Aparna brought me a new treat today at the hospital- 'black chickpeas.' I didn't know that these even existed. They are delicious, more nutty and earthy in flavor than the regular ones! I can't wait to go hunting for them in the store ;) I see a perfectly decorated Halloween meal coming on ;)



I am trying to decrease the amount of lactose I consume, so I've been using Organic Valley lactose free milk. Then, this week when Green Valley yogurt was on sale, I decided to try it out!



I'll get back to you on how it tastes!

The Leaves are Changing

Dave and I started our morning with Van's gf buckwheat waffles with peanut butter, bananas and a little honey. A great way to start our mornings ;)



We then took a ride up the New Hampshire coast to the beaches in North Hampton.

My how the leaves are changing...


We then drove to Portsmouth and found this pumpkin patch.



On the way to see Dave's mom I found my iphone reverse camera...



Dave's mum picked this magazine up for me! It has great recipes!



A perfect way to finish our day:shepherd's pie with sweet potatoes and ground turkey with corn pudding for dinner. Delish!

It must be HOCR...

It must be Head of the Charles Regatta(HOCR) weekend because the traffic is awful tonight! I was leaving my MSDA Dietetic Internship Workshop at BU this evening and it took be about an hour to drive home!

Though this race weekend was one of the highlights of my rowing career in college, what a mess it makes in Boston, traffic wise!!!!


But, I better start with my morning first ;)

It started with one little puppy pushing her way through the covers and to the bottom of the bed to find my missing sock this morning... mischievous little one...

Too bad she looked so cute!


Then, I headed to work to train a couple clients, and came home and made some delicious egg tacos.

Scrambled eggles with cheddar, rooster sauce, avocado slices, red pepper slices, and Olivia's mixed greens! A perfect start, 'food' wise, to the morning. ;)


Mid-day I had leftover chili for lunch and took Luna on a big walk, and then came home and got on the spin bike for 45 minutes.


Then, I drove over to the 'other' side of the river to the MSDA Dietetic Internship Workshop. I met a lot of the local(MA, NH, and RI) dietetic internship directors as well as learned some valuable information that will help me with my application. Thanks MSDA( Mass Students Dietetic Association)!

I called Dave from the car, and he decided we were going to use ourBuyWithMe coupon for Stone Hearth pizza for dinner.

I have to admit, I was happy I didn't have to cook dinner ;)

I ordered the GF Peperonata which has fontina and parmesan over a sauce of braised red/yellow peppers, onion, rosemary, and tomatoes. It was SOOOO good!


Dave got a pepperoni pizza(no surprise there!) and he ordered their gluten free pasta and meatballs (homemade meatballs baked with ricotta, mozz/provolone, with their signature tomato sauce, and fresh cut basil) too! It was good to try one of their pasta dishes, especially since it was gluten free. Dave loved his pizza and the pasta dish!


My plate...well the first round I had another piece of pizza and small portion of the pasta dish, too!

Another day

Today's check list:

- teach spin
- walk Luna
- stop at the vet
- work on my thesis literature review
- homework for other classes


Post spin class this morning, I had leftover chili for breakfast. It helped fuel me through a morning of homework.

After taking Luna for a walk, I made a salad for lunch: mixed greens, 1/2 pear, 1/2 red pepper, 1 carrots, 2 tbsp. of feta, and one Bell & Evans gf patty. Deliicious!



I tried to make pretzels with leftover gf Bob's pizza dough. It didn't work as well as I had hoped!


For dinner, Dave had found Starfish gf haddock at Whole Foods. It was delicious! Three pieces are about 200 calories, 6 grams of fat(1 gram sat fat), and 11 grams of protein.


I made peas and carrots, mixed greens, and extra gf pizza crust 'flatbread' as side dishes!

Chili & Chips

After training this morning, I worked from home ALL day! I got a ton of school work done, chores, a great 'home' spin, two nice long walks with Luna, and made turkey chili for dinner. Overall, it was a very successful day!


I made myself 'fake pho' soup for lunch. I had some chicken stock in the freezer I warmed up, then I threw in some minced ginger, carrots and red pepper slices, three small pieces of chicken, and some rice noodles. Of course, it needed a little heat so I had some rooster sauce, and a tiny bit of this chili garlic sauce!


This meal was filling and got me ready for my afternoon spin!


Then, as a wonderful addition to our dinner tonight I made: homemade corn tortilla chips! They were so easy and D-E-L-I-C-I-O-U-S!

Chips and chili--- what two fantastic "C" words!


My corn chips:

3x corn tortilla(make sure they are gluten free!)
1 tbsp. of olive oil
salt(if desired)

Preheat oven to 400F. Brush the tortillas on both sides with the olive oil. Then cut into triangle shapes. Add salt or any other spices you desire(I added a little salt)! Then bake in the oven for 8-10 minutes. Check them at 8 minutes, and see if they have reached your desired crispness, if not keep cooking.

A Fall Weekend

Dave and I went to Concord yesterday to take walk with our friend Jen and her families dogs. Luna was not on her best behavior during this walk through the MA woods though, so it was little more stressful than peaceful. I did get some cute pictures.

Then, Dave and I took a quick trip down to the Wrentham Outlets to take some clothes back. On our way home we stopped at the NEW Whole Foods in Dedham. It's huge, and has an ENTIRE gluten free aisle! It was pretty awesome!

We were famished when we got home. So, I whipped together some 'roaster chicken' red curry with onions, sweet potatoes and peas and carrots. It turned out pretty well!





Then, this morning we went to Crate & Barrel to a wedding register event! It was fun to walk around together and talk about our home.

Dave 'scanning' our first item! We are officially registered at our first store!


Good German knives are, of course, on our list!



Today was also filled with chores and homework.

I did make the butternut squash and chicken sausage bake, again. This time I used apple sausage, which was a perfect exchange.
